Mini Cheese Cake Updated with Pictures!

Yummy Mini Cheese Cakes!
So yesterday I bit the bullet and I cleaned out my fridge. My husband bathed the kiddos and I got started. It wasn't too bad but it is nice to have a clean fridge! While cleaning out the fridge I can acrossed quite a few whipped cream cheese containers. There was a steal of a deal on those a while ago and I must have bought like 10 of them. With 5 containers left over and in danger of becoming spoiled I set out to find some recipes that would use them.
Finally a clean and organized fridge!
 My stepdad loves LOVES mini cheese cakes. I remember my mom making them for him every Valentines day. So I knew, I just had to make some. They are delicious, yummy, superb, etc.!

Here is the recipe:

2 8oz containers of cream cheese, soften (I used whipped cream cheese and they came out fine)
2 eggs
2/3 cup white sugar
2 Tbsp lemon juice
Vanilla wafers
Pie filling (I use cherry, yum!)

Preheat oven to 350 degrees. Place vanilla wafers at the bottom of 18 cup cake liners.


Beat cream cheese, eggs, white sugar and lemon juice. If the mixture is soupy, don't worry they come
out fine!





Fill each cup cake liner 2/3 of the way full.


Bake for 15-17 minutes or until firm.


Remove from oven and let cool. Fill each cheese cake with pie filling. Enjoy!
